Wenn Eiwei\u00df verwendet wird, zuerst einen &#8222;Dry Shake&#8220; (ohne Eis) f\u00fcr eine schaumige Textur durchf\u00fchren. Dann erneut mit Eis sch\u00fctteln und servieren. Tipp: Ein Brandy, der dir auch pur schmeckt, ist h\u00f6chstwahrscheinlich eine gute Wahl f\u00fcr diesen Cocktail. Kleiner Geheimrat: Cognac funktioniert hier \u00fcbrigens auch hervorragend, falls du mal variieren m\u00f6chtest.<\/p>\n<p><em>3. Textur durch Eiwei\u00df:<\/em><br \/>\nTraditionell kannst du Eiwei\u00df zum Brandy Sour hinzuf\u00fcgen, um eine tolle cremige Schaumkrone zu bekommen. F\u00fcr diejenigen, die sich bei rohem Eiwei\u00df nicht so wohl f\u00fchlen: Es gibt pasteurisiertes Eiwei\u00df, das eine sichere Alternative ist. Oder du nimmst einen Pflanzenersatz wie Aquafaba (Kichererbsenwasser), der ebenfalls einen exzellenten Schaum gibt, fast wie zaubern.<\/p>\n<p><em>4. Shaken statt Stirring:<\/em><br \/>\nDen Brandy Sour ausreichend zu sch\u00fctteln ist wichtig \u2013 besonders wenn Eiwei\u00df im Spiel ist. Dadurch wird der Drink luftig und erh\u00e4lt seine sch\u00f6ne Konsistenz. Also keine Sch\u00fcchternheit: Nimm den Shaker in die Hand und gib ihm, wie ich immer sage, eine &#8222;gute Gesch\u00e4ftsprozessoptimierung&#8220; (eine ordentliche Sch\u00fcttelrunde eben).<\/p>\n<p><em>5. Gl\u00e4serwahl:<\/em><br \/>\nEin kleines Old-Fashioned-Glas oder im Sommer auch ein sch\u00f6nen Tumbler \u2013 je nachdem, wie l\u00e4ssig du es angehen willst. Ein naher Verwandter ist der <strong>Whiskey Sour<\/strong>, bei dem eben Whiskey statt Brandy verwendet wird. Ein weiteres prominentes Mitglied ist der <strong>Pisco Sour<\/strong>, der mit peruanischem oder chilenischem Traubenschnaps den Ton angibt.
